Do you think it is OK to use your granite counter top as a cutting board?  Think again.  The granite cutting surface will damage your knife.  Why go through all the trouble of sharpening your knife if you are going to grind it against a granite counter?  Use a wooded cutting board instead. Just wash the board, and your knife with a mild anti-bacterial dish washing solution after each use.
