Hot Chili Sauce Recipes - Buffalo Wings

Chili sauce is one of those ultimate KicktheFridge condiments.  It lasts forever in the refrigerator.  It does not matter if it is Louisiana Hot Sauce or my current favorite, Huy Fong's Sriracha Sauce. You can usually find an old bottle of chili sauce somewhere in the back of the refrigerator. The Huy Fong Sriracha sauce is made from a combination of hot chili peppers and garlic. It can be found in most of major supermarkets that have an international food section.  Lately, I have been putting this on just about everything.  Here are a few foods and recipes that I have been using this stuff on...

Green Chili in a Thermal Pot

Step into any Mexican Restaurant in the the Southwestern United States and you will find Green Chili on the menu.  My favorite are green chili burritos, and I decided to make these to chow down during the superbowl.  It was a great game, and my wife and I had great food.

We got ourselves a "thermal pot" shortly before Christmas, and I wanted to give a go at making green chili in the thermal pot. The cooking process for green chile calls for a long simmer to allow the meat to break down and become tender. Once it is tender then you can shred it with a pair of forks.

Bread Pudding from Burned Blueberry Muffins

Today, I came home from work to the smell of something burning in the oven, and a platter of burned blueberry muffins cooling on the kitchen counter. Uh oh, there goes dessert for tonight's small dinner gathering we had planned with friends.  My wife, daughter,  and her friend made the muffins, and went downstairs to play, but did not hear the timer ring when the muffins were ready.  It was not until my wife caught a whiff of something burning that she realized that they had lost track of the time. Hey, it even happens to the best.

So what to do, I was not fond of the idea of tossing a dozen burned muffins into the garbage.  They were not burned all that bad, they were still edible, but just not that good tasting.  So, I decided to try a bread pudding that incorporated the muffins...

Chinese Lettuce Wraps with Chicken

A simple dish that contains just a few ingredients, are Chinese lettuce wraps made with chicken.  Lettuce wraps have been a popular mainstay at PF Chang's China Bistro for some years now, PF Chang's is a higher end national Chinese restaurant chain. 

It has been several years since I have eaten at PF Chang's, but with this short list of ingredients, you can come pretty close to their recipe in your own home. All you need are the following ingredients: chicken breast, a can of water chestnuts(drained), a can of bamboo shoots(drained), ginger root, soy sauce, hoisin sauce, chili-garlic sauce (optional), and a cucumber. They also use black fungus, which is available at most oriental grocers, but I am not a big fan of mushrooms, so I leave them out.
